Colour: Amber Nose: Butterscotch, orange peel, peaches and apricots, liquorice. Palate: Sweet butterscotch, tropical fruits, oak spices, almond and vanilla. Finish: Medium-long sweet and round finish. RUM MANHATTAN Ingredients: 60 ml 1731 Central America XO 30 ml Dolin Red Vermouth 2 dashes Gary Regan Orange Bitters Combine the rum, red vermouth, bitters and ice in a cocktail mixing glass. Stir until the cocktail is well chilled and then pour through a strainer into a chilled coupe glass. Garnish with orange zest and a maraschino cherry.
