Colour: Amber Nose: Well balanced subtle top note of Jamaican funk, sweet cane juice and a slight sweet molasses aroma. And with hints of barrel spices and oak that sits dried pineapple and cocoa. Palate: Vibrant and spicy. A hit of spice with a heavy Trinidad influence. Toasted coconut, vanilla and zingy citrus zest. Finish: Medium-bodied caramelised nuts and liquorice finished. ZOMBIE Ingredients: 90 ml 1731 British West Indies XO 30 ml grapefruit juice 20 ml pomegranate syrup 20 ml lime juice 20 ml lemon juice 2 dashes of Angostura bitters 5 ml absinthe 5 ml allspice dram 40 ml pineapple juice Shake the ingredients with ice and strain them into a Tiki glass filled with crushed ice. Garnish with cinnamon, a spent lime shell and nutmeg.
