Winner of 2020 Kura Master Platinum and 2021 Kura Master Gold Award. This sake uses Kanzawa yeast which is a local yeast first found in Ishikawa ken and is known for being the original fragrance of ginjos. This is a “Nama Chozo” which means it’s only pasteurized once before it’s released from the brewery.
This sake has a fruity apple, vegetal, floral, sweet melon nose with a palate that is light honey-dew melon with slight umami and a clean finish. The gentle bouquet of rice and ginjo is typical of Kanzawa yeast. The palate is that of typical Sinsen style umami.
