Tasting Note

From the unusual meeting of Chardonnay & Riesling Renano from the vineyards within the Tenuta La Palazza, the white of the Drei Donà house is born, expression and white exception of a terroir of great reds. The Chardonnay and Rhein Riesling vineyards were born from the futurist vision of Claudio Drei Donà, while the combination of the two grapes in this unusual cuvèe was born from an intuition of his son Enrico. After 18 hours of cold maceration in contact with the skins, the Riesling Renano and Chardonnay are vinified separately in stainless steel at a controlled temperature. Only 10% of the Chardonnay is fermented in French wooden tonneaux for about 30 days at a controlled temperature. The malolactic fermentation is done only on some tanks, in order to better balance the acidity of the finished product. The individual parcels vinified separately are also aged sur lie for a period of about 3-4 months, both in the tonneaux and in the steel tanks. After the creation of the cuvée the Tornese is left to rest in steel for a month and then refined for at least 3 months in the bottle. A white surprise from a terroir known above all for its great reds.
