Tasting Note

The beloved Loch Gorm of this extraordinary distillery in the 2021 version, this time with distillates between 2011 and 2012 matured in twenty-four ex-Sherry Oloroso casks that produced 17,000 bottles. The nose is both sweet and rough at the same time, intensely fruity (blueberries, blackberries, cooked apples, Williams pears, dried figs with almonds) with wood and juniper hints, as well as a distinct vein of leather. A definite thread of herbaceous smoke with touches of saltiness blows over fudge and spicy touches of cinnamon and nutmeg. Balanced. In the mouth it’s an elegant dance of sweet and salty that intertwines fruity impressions with iodine and mineral ones coming from the ocean, always caressed by a vegetable smoke that brings tones of juniper and toasted cereals. Bergamot, a hint of pepper, toffee and, on the length, leather and tobacco. The finish is long, with salty bits of orange, red fruits, toasted sugar and dull embers.

Kilchoman

Kilchoman was the first distillery to be built on Islay in over 124 years. Founded in 2005, Kilchoman is Islay’s only farm distillery, producing Scotland’s only Single Farm Single Malt. Kilchoman is a family run business, established by Anthony and Kathy Wills in 2005, the husband and wife team persuaded their three sons; George, James and Peter, to join the business as it expanded. The Wills family remain the driving force behind Kilchoman with Anthony as Managing Director and Master Blender, Kathy head of the Visitor Centre and their three sons managing the distillery’s sales and marketing activities.
