Tasting Note

Fine, subtle. Deliciously vanilla and fruity (pineapple, Mirabelle plum), the first nose is also honeyed (acacia, lime blossom), malty and vinous (white port, muscatel). Allowed to breathe, absolutely delicious aromas of apple tart, greengage plum and candied ginger appear alongside lots of heady florals (iris, tuberose, lily, dahlia). Next, in the true Speyside style, the aromatic palette is covered in abundant grains of malted barley. Rich, powerful. Magnificently liquorice and oily (rapeseed, sunflower), the attack also reveals citrus fruit (orange, clementine), exotic fruit (passion fruit, mango) and spearmint. On the mid-palate, varied spices (clove, cumin, coriander, dill) bring lots of energy to the flavour palette. Gradually, exquisite flavours of camomile, clover and fresh walnut cover the taste buds. The very creamy end of the palate is vanilla, saffrony and spicy (black pepper, cinnamon). Long, silky. The very powdery (ice cake) start of the finish is like a superb sake. Magnificently herbaceous (box tree, holly, juniper), with time it becomes increasingly rich (calisson d’Aix, prune flan). The tertiary retro-nasal olfaction is driven by notes of marron glacé, chestnut, pine resin and verbena. The extremely concentrated empty glass is slightly camphoric, herbaceous (alfalfa, coriander), lemony and above all malty (barley pulp, porridge).

Macallan

The Macallan is almost a victim of its own success, with fans complaining about being unable to get their hands on the coveted whisky. But, as The Spirits Business reports, the company has invested in production capacity to keep up with demand. Revolution was in the air in 1926, what with the general strike, but it was business as usual at the sleepy Speyside distillery of The Macallan. Cask no. 263 was just another Sherry butt filled that year and destined to disappear into a bottle of blended Scotch whose price was then capped at 12s/6d (62p). But somehow the cask slipped through the net and slumbered until 1986 when 40 bottles were filled. Today, what was once a humble spirit made from malted barley, water and a little yeast is now smashing records at auction. If the bottle comes with a pop art label by Peter Blake or Valerio Adami, you can expect to pay more than a million bucks – such is the power of The Macallan.
