Colour: Deep amber, gold colour. Nose: Scents of coffee and cacao leaning towards bitter notes, tobacco and tropical fruits. Palate: Powerful and round at its heart, gifting flavours of cacao and coffee, before developing into leather and sandalwood. Finish Long finish, not heavy but fine and balanced, before returning to aromas of cherry and chocolate. BROOKLYNITE 2 oz Jamaican dark rum 1/2 oz honey 1 dash lime juice Pour the rum, honey and lime juice into a cocktail shaker half-filled with ice cubes. Shake well, strain into a cocktail glass, and serve.
For centuries the islanders have been jealously protecting a natural treasure that Kingsyaad bottles. It embodies the values of an island faithful to its traditions, which never sold the secret of its recipe, in order to transmit it to future generations. As like its natives, it is without artifice, proud, host, and most of all, the expression of lush nature. Boosted by the dunder and a longer fermentation than agricultural rums, Kingsyaad develops even before its distillation, complex and very exalted aromas. This strength is pushed to its limit thanks to the famous pot still which catalyses its energy without affecting its unique and authentic dimension. The fermented wort is heated the first time to obtain light alcohol (around 30°). It is then heated a second time, to obtain a brandy around 70°. Having a lower alcoholic level (90% for rums that are distilled in column alembic), the rum preserves more taste, due among other things to the non-alcoholic elements. The aromatic strength and the precision of Kingsyaad rum is the fruit of the final distillation, very sensitive to the variations of the alembics adjustments.
