Great balance and unique flavour. This is one of the flagships of Tsuji Honten. The home of young brewers trying to reinvent the ancient styles of sake making. An age old method pre-dating even the Kimoto method, this creates a playful sake with a full mouthfeel, zesty sweetness and flavors of ripe fruit. Perfect for cheeses.
What does this wine tast like?
Tsuji. Gozenshu
Gozenshu Brewery (Tsuji Honten Co., Ltd.) was founded in 1804 in Katsuyama, Okayama by Yahei Tsuji, originally a mercer who ventured into brewing business. Gozenshu’s sake was initially sold under “Man Etsu” (萬悦) brand, however it was later changed to the current name after the sake was purveyed to the Lord Miura, the ruler of the locality in the mid to late Edo period. Katsuyama is located in the region of Mimasaka (an old name for the northern Okayama) which had been long known as “Umasake no Kuni” (literally translated as “the country of fine brew”.)
Maiko Tsuji
She was born in 1977, the eldest daughter of a brewer. After graduating from university, she joined Tsuji Honten in 2000 and became involved in sake brewing. Obtain qualifications of a Toji in 2005. She became the Toji in 2007.
