A soft and intuitive nose of stone fruit, rainfall, mineral and straw. The Yamahai method gently infuses this brew with notes of cedar and a playful gaminess. Elegant and soft on the palette, a clean finish with a soft umami. One of my favourite classics! This sake have something for everyone. Good floral aromas, good complex flavours and finish. Kiminoi

Kiminoi is founded in 1842, based on the oldest record remaining in the company's license of sake brewing 128 Koku (about 23,000L) by the feudal lord Sakakibara of the Takada clan. Arai area was prone to fires since the olden days, which resulted in many past records being burned down during the Meiji Era. There is no clear record of the origin of the name "Kiminoi" either. However, at the beginning of the Meiji era, there was an event that indicated its origin."Tanaka liquor shop" was changed to "Kiminoi Shuzo Co., Ltd." in 1951. The trade name of the shop was "Tanakaya" or "Sake Tanaka", and the owner succeeded to the name of "Daigoro" from generation to generation.

Hiroshi Hayatsu

Awarded the Grand Prize in the DaiGinjo category at the National Tax Agency Sake Competition. He still works hard at growing rice and continues to brew Kiminoi sake using the rice he grew. He specializes in "Yamahai Method," very traditional sake brewing method that is less common nowadays in Japan, and has won numerous awards both in Japan and abroad. The brewery focuses on "Wa" (harmony), and together with the brewers, they strives not only to pass on this traditional technique, but also to further improve the quality of the Kiminoi sake.
